Mum’s Quick Lamb Curry

This recipe is the second recipe mum shared with me. It’s another quick and easy family recipe that goes a long way when you serve it with rice. It’s also one of those recipes that tastes even better the next day.

cooking instructions

1. Brown the onions and diced lamb in oil. When they are ready add the curry powder and stir through the onions.
2. Blend all the other ingredients together in a jug and pour over the lamb and onions.  Then stir it all together.
3. Cover the pan (lid or foil) and simmer for 30 mins.
4. Boil rice – the amount will depend on how many you want to serve. Usually ¼ cup uncooked rice per person is enough.

  • 500g Diced lamb (you’re looking here for about 2cm squares – if the chunks of lamb are bigger, add a bit more to the cooking time or cut them up smaller)
  • 1 Onion diced
  • 1 tablespoon Curry powder
  • 1 tablespoon Olive oil
  • 200g Plain yoghurt
  • ½ cup Water
  • ½ cup Sultanas (or other fruit – cranberries are really nice, or apples are great cut up into small 1 cm cubes)
  • 1 cup Frozen peas
  • Rice (about ¼ cup per person)
