There is a confusing array of terms for the different lamb cuts in internet land. On top of that, butchers offer a huge range of different sorts of cuts for each area of the lamb carcass.

Below we describe the cuts and options that we are able to offer and a bit of a guide about how we think each cut is best used depending on its ‘tenderness’*….. Just click on the diagram of the lamb below.

*Note – we think all our lamb is tender ….. it’s really all just varying degrees of yumminess.

LAMB CUTS

Click on the different parts of the lamb to see which cuts come from where.  This might help you with choosing the options of lamb cuts in the shop. We have ranked the lamb as Tender, Super Tender and Really Super Tender.

LEG

TENDERNESS: Really Super Tender

CUTS: Boned and Rolled Lamb Roast, Butterflied Lamb Roast, Easy Carve Lamb Roast, Bone In Lamb Roast.

COOKING: All these cuts can be roasted.  You can also stuff and roll your own Butterflied Lamb Roast.

SHOULDER

TENDERNESS: Tender

CUTS: Boned and Rolled Lamb Shoulder Roast, Diced Lamb Shoulder, Forequarter Chops

COOKING: Best as rolled roast or diced for casserole. Any slow cook recipes are good for this cut.  The Forequarter Chops come partly from the shoulder and partly from the rib.  They are great fried or for the BBQ.

FLANK

TENDERNESS: Tender

CUTS: Gourmet Lamb Sausages, Lamb Mince

COOKING: The flank and trimmings from other areas of the lamb are made into our really tasty mince and sausages. The mince is great for homemade sausage rolls, kofta’s, meatballs or rissoles for the BBQ. And the sausages are great on the BBQ.

LOIN

TENDERNESS: Super Tender

CUTS: Thick Cut Mid Loin Chops

COOKING: Ideal for the BBQ or grill

FORE SHANK

TENDERNESS: Tender

CUTS: Frenched Lamb Shanks

COOKING: Braised and casseroled.  Any slow cooking is great for shanks.  Some of the shanks remain attached to the roast.

RUMP

TENDERNESS: Really Super Tender

CUTS: Lamb Rump Steaks, Lamb Rump Stir Fry Strips

COOKING: Great for steaks on the BBQ or putting into any of your stir fry recipes.

HIND SHANK

TENDERNESS: Tender

CUTS: Frenched Lamb Shanks

COOKING: Braised and casseroled.  Any slow cooking is great for shanks.  Some of the shanks remain attached to the roast.

RIBS

TENDERNESS: Really Super Tender

CUTS: Lamb Ribs, Frenched Lamb Cutlets, 8 Point Frenched Rack of Lamb, Forequarter Chops

COOKING:  The lamb ribs are fantastic for marinating and roasting.  The Cutlets can be crumbed, fried or BBQ’ed and the rack of lamb is an ideal roast. The Forequarter Chops come partly from the shoulder and partly from the rib and are great fried or for the BBQ.
